Puffy Spinach Rolls Recipe

Puffy Spinach Rolls Recipe


  • 2 eggs (1 egg yolk to brush on top),
  • 1 cup vegetable oil,
  • 1 cup plain yoghurt,
  • 1 cup warm water,
  • 8 cup all purpose flour,
  • 42 gr. rapid-rise yeast,
  • 2.5 teaspoons granulated sugar,
  • 4 teaspoons salt,
  • Black cumin seeds.

For the filling;

  • 1 bunch spinach,
  • 1/4 cup olive oil,
  • 2 teaspoons salt.


  1. Mix together 6 cups of flour, yeast, salt and sugar in a large bowl,
  2. Make a cavity in the centre and add 1 egg, 1 egg yolk, yoghurt and vegetable oil,
  3. Add the warm water slowly and carefully while mixing with your hands,
  4. When everything is incorporated, start adding the rest of the flour slowly until you get a soft non sticky dough,
  5. Cover the dough and let it rest in a warm place for 45 mins,
  6. In the meantime, finely chop the spinach,
  7. Heat the vegetable oil in a pan and cook the spinach until it withers,
  8. Deflate the risen dough and knead for 1-2 mins,
  9. Pull a walnut size piece out of the dough and form into a smooth ball,
  10. Roll the ball out using a rolling pan on a well-floured surface, into palm size circle,
  11. Smear 3 teaspoons of spinach filling on top,
  12. Roll the circle and place on a baking sheet lined with parchment paper,
  13. Repeat this until you have no dough left,
  14. Cover and let the rolls rest for 30 mins,
  15. Brush 1 egg yolk on top of the rolls and sprinkle black cumin seeds,
  16. Bake in a 200 degrees Celsius preheated oven until golden brown on top.
