Puffy Spinach Rolls Recipe
Serving : 25-30 Pieces
Ingredients
- 2 eggs (1 egg yolk to brush on top),
- 1 cup vegetable oil,
- 1 cup plain yoghurt,
- 1 cup warm water,
- 8 cup all purpose flour,
- 42 gr. rapid-rise yeast,
- 2.5 teaspoons granulated sugar,
- 4 teaspoons salt,
- Black cumin seeds.
For the filling;
- 1 bunch spinach,
- 1/4 cup olive oil,
- 2 teaspoons salt.
Preparation
- Mix together 6 cups of flour, yeast, salt and sugar in a large bowl,
- Make a cavity in the centre and add 1 egg, 1 egg yolk, yoghurt and vegetable oil,
- Add the warm water slowly and carefully while mixing with your hands,
- When everything is incorporated, start adding the rest of the flour slowly until you get a soft non sticky dough,
- Cover the dough and let it rest in a warm place for 45 mins,
- In the meantime, finely chop the spinach,
- Heat the vegetable oil in a pan and cook the spinach until it withers,
- Deflate the risen dough and knead for 1-2 mins,
- Pull a walnut size piece out of the dough and form into a smooth ball,
- Roll the ball out using a rolling pan on a well-floured surface, into palm size circle,
- Smear 3 teaspoons of spinach filling on top,
- Roll the circle and place on a baking sheet lined with parchment paper,
- Repeat this until you have no dough left,
- Cover and let the rolls rest for 30 mins,
- Brush 1 egg yolk on top of the rolls and sprinkle black cumin seeds,
- Bake in a 200 degrees Celsius preheated oven until golden brown on top.
