Pumpkin Pound Cake Recipe Pumpkin Pound Cake Recipe

Ingredients:

  • 2 eggs,
  • 1 cup granulated sugar,
  • 1 cup milk,
  • 1/2 cup vegetable oil,
  • 1 cup boiled and mashed pumpkin puree,
  • 2 cups all purpose flour,
  • 25 gr. baking powder,
  • 2 teaspoons vanilla extract,
  • 1 cup ground walnuts.

Preparation:

  1. Mix walnuts with 1 tablespoon of flour,
  2. Cream together the eggs and sugar,
  3. Add in the milk, vanilla extract and vegetable oil and continue whisking,
  4. Stir in the flour and baking powder slowly and whisk,
  5. Add the pumpkin puree and whisk until you get a smooth batter,
  6. Finally incorporate in the walnuts and fold,
  7. Pour the batter into a well-greased bread loaf pan,
  8. Bake in an oven pre-heated to 190 degrees celsius until the top is golden brown, or until when a toothpick inserted in the centre comes out clean,
  9. Decorate with honey and shredded coconut and serve.
