Sun-Dried Tomato Omelette Recipe
Serving : 2-4 Servings
Ingredients
- 3 eggs,
- 1 onion,
- 10 sun-dried tomatoes,
- 2-3 tablespoons olive oil,
- Salt.
Preparation
- Soak the sun-dried tomatoes in hot water for 15 mins, drain and chop into small cubes,
- Finely chop the onion and sauté in olive oil until soft,
- Add the tomatoes and stir for 2-3 mins,
- Beat the eggs in a separate bowl along with salt,
- Pour the beaten eggs over the tomatoes,
- Cook on low heat (lid on) until the eggs are set, without stirring.
