Sun-Dried Tomato Omelette Recipe

Ingredients

  • 3 eggs,
  • 1 onion,
  • 10 sun-dried tomatoes,
  • 2-3 tablespoons olive oil,
  • Salt.

Preparation

  1. Soak the sun-dried tomatoes in hot water for 15 mins, drain and chop into small cubes,
  2. Finely chop the onion and sauté in olive oil until soft,
  3. Add the tomatoes and stir for 2-3 mins,
  4. Beat the eggs in a separate bowl along with salt,
  5. Pour the beaten eggs over the tomatoes,
  6. Cook on low heat (lid on) until the eggs are set, without stirring.
