Potato Latkes Recipe
Latke is a potato dish that Jews cook during Hanukkah. Latke is served with apple sauce and sour cream.
It wouldn't be wrong to call latke a potato pancakes. To make the latke, grated potatoes are squeezed as in mucver, then mixed with eggs and flour, and then fried.
While peeling and grating the potatoes, I keep them in water to prevent them from browning. For this reason, I prepare a large bowl of water before I start peeling. As I peel the potatoes, I throw them into the water. Then I take them out one by one, grate them and put them back in water.
After grating the potatoes, you need to squeeze the water and juice well. To do this, you need to put the potatoes in a clean cheesecloth and squeeze them with all your strength. The better you squeeze the juice from the potatoes, the crispier your latkes will be. Again, I use starch instead of flour for this crispiness.
Latke is often served with apple sauce and sour cream. Sour cream makes a nice accompaniment, but to be honest, I can't say the same for apple sauce. I prepared the recipe for the video and photo shoot so that it would be exactly as it should be, but since we couldn't find it suitable with potatoes, we ate it as dessert after dinner. I think you can guess whether you would like these two together or not, depending on your taste. If you think you won't like it, you can skip the apple sauce.

Ingredients
- 1 kg of potatoes,
- 1 egg,
- 1 tablespoon of cornstarch,
- 1/2 teaspoon baking powder,
- Salt to taste,
- Oil for frying.
For apple sauce;
- 3 apples,
- 2 tablespoons of sugar,
- 2 tablespoons of lemon juice,
- 1/3 cup of water.
Preparation
- For the apple sauce, peel the apples and cut them into cubes,
- Take the apples, sugar, lemon juice and water in a pot,
- Take it on the stove and cook, stirring frequently, until the water evaporates,
- Blend the apples with a hand blender until they are pureed,
- For the latke, peel and grate the potatoes and take them in a bowl filled with water after grating each one,
- Strain the grated potatoes and take them into a cheesecloth,
- Strain the water by squeezing it with all your strength,
- Take the grated potatoes into a bowl,
- Add egg, cornstarch, salt and baking powder and mix,
- Heat enough oil in a large pan to cover the bottom of the pan,
- Take a spoonful of the mixture, drop it into the hot oil and flatten it by pressing it with the back of the spoon,
- When the bottom is browned, turn it over and fry the other side,
- Remove the fried latkes into a strainer,
- You can serve it with apple sauce and sour cream.
