Potato Cups Recipe
Serving : 15 pieces
- 2 mid sized potatoes,
- 1 egg,
- 2 tbsps bread crumbs,
- 2 tbsp parmesan cheese, grated
- Any vegetable for filling.
- Peel and grate potatoes with large side of grater,
- Add egg, bread crumbs, parmesan cheese, salt and pepper and mix well,
- Put 1 tbsp of mixture into silicon muffin cases,
- Give a bowl shape with your fingers,
- Bake in a 200 C pre-heated oven until golden,
- Serve with any cooked vegetable of your desire.
