Savory Olive Roll Cookies Recipe
Serving : 25-30 Pieces
Ingredients
- 250 gr. butter at room temperature,
- 1/2 cup olive oil,
- 2 eggs (1 egg white will be brushed on top),
- 4 tablespoons yoghurt,
- 5,5-6 cups flour,
- 2 teaspoons baking powder,
- 2 teaspoons salt,
- 1 cup olive paste,
- Thyme.
Preparation
- Whisk together butter, olive oil, 1 egg, 1 egg yolk and yoghurt in a large bowl,
- Stir the baking powder and salt into the flour,
- Start adding the flour mixture into the wt mixture slowly while mixing with your hands,
- Knead until everything comes together to form a non-sticky dough,
- Let the dough rest for 10 mins and divide into three pieces,
- Roll one of the pieces out on a floured surface into a 10 cm X 30 cm rectangle,
- Smear olive paste and roll from the longer side,
- Brush the roll with egg white and cover with dried thyme,
- Cut into 0.5 cm slices and place on a baking sheet lined with parchment paper,
- Prepare the other two pieces of dough the same way,
- Bake at 200 degrees celsius preheated oven until golden.
