Savory Olive Roll Cookies Recipe

Serving : 25-30 Pieces

Ingredients

  • 250 gr. butter at room temperature,
  • 1/2 cup olive oil,
  • 2 eggs (1 egg white will be brushed on top),
  • 4 tablespoons yoghurt,
  • 5,5-6 cups flour,
  • 2 teaspoons baking powder,
  • 2 teaspoons salt,
  • 1 cup olive paste,
  • Thyme.

Preparation

  1. Whisk together butter, olive oil, 1 egg, 1 egg yolk and yoghurt in a large bowl,
  2. Stir the baking powder and salt into the flour,
  3. Start adding the flour mixture into the wt mixture slowly while mixing with your hands,
  4. Knead until everything comes together to form a non-sticky dough,
  5. Let the dough rest for 10 mins and divide into three pieces,
  6. Roll one of the pieces out on a floured surface into a 10 cm X 30 cm rectangle,
  7. Smear olive paste and roll from the longer side,
  8. Brush the roll with egg white and cover with dried thyme,
  9. Cut into 0.5 cm slices and place on a baking sheet lined with parchment paper,
  10. Prepare the other two pieces of dough the same way,
  11. Bake at 200 degrees celsius preheated oven until golden.
