Olive Oil Based Vegan Butter Recipe
I shared a vegan butter recipe before. But it was a recipe with more ingredients and an ingredient like aquafaba that needed pre preparation process. The idea of turning olive oil into butter appealed to me more, although it still took some time.
This idea came to my mind when I put the remaining spicy olive oil in the refrigerator to use it in other recipes after the sun dried tomatoes in the olive oil recipe I prepared for breakfast a few weeks ago, and I only realized it a week later. The spices had sunk to the bottom of the jar and the olive oil had frozen naturally. For a moment it resembled butter.
Of course, spicy olive oil for breakfast is not something we never eat. But at that moment, I imagined that olive oil to be spreadable with bread.
Of course, freezing the olive oil was not enough for what I imagined. When you freeze olive oil, what you get is frozen olive oil. I wanted it to be a more spreadable breakfast oil. For this, I first added a few flavors that would break the aroma of olive oil (but never overpower) and whipped the oil with a mixer to fill it with air. In this way, the difference was like the difference in consistency and flavor between the paper-packed margarines used for cooking and the margarines spread on bread for breakfast. In short, I have obtained a puffy vegan butter that can be spread on bread just as I wanted.
As I have been trying to explain from the beginning, this oil is just a spread on bread. It can't be a one-to-one alternative to butter in pastries. The best vegan butter substitutes for pastries are still vegan margarines, unfortunately. Of course, there are also vegan pastries made with oil, as in sugar free and vegan cookies and vegan brownies recipe.
You can store vegan butter in the refrigerator for years. If you keep it at room temperature, it will turn into liquid olive oil.
Similarly, try not to keep them at room temperature before and during serving. It will liquefy in a very short time, especially if the room temperature is high.

- Heather Paul: I was curious why you added nutritional yeast. It’s not something I have or have ever purchased and wondered if it was essential to the recipe. Thanks in advance! March 23, 2024 4:34 pm
- Kevser: It gives a buttery taste to the recipe. Otherwise it would be just onion and garlic scented olive oil. March 24, 2024 12:54 pm
