Mahluta Soup Recipe
Turkish cuisine is so extensive and diverse that it is impossible for an average Turkish person to know all of the food in Turkish cuisine. You have to have a special interest on cooking or gastronomy. In some regions there are over 500-600 recipes just specific to that region. Mahluta soup is one of these regional recipes.
Most of the people in Turkey became acquainted with the mahluta soup with the traditional soup series of an instant soup brand. I recently mentioned in an article that I have been the number one follower of food and travel shows for as long as I can remember. Even I saw mahluta soup for the first time in the advertisements of this brand. Later, it started to find a place for itself on food recipe websites, but when you look at this event, one cannot help but think that it is possible to devoid of really delicious dishes because generally famous dishes take part in the food shows.
Because all the cooking and travel shows are almost the same. When they go to Hatay for example, they just shaw Kilis tava, paper kebab and künefe. People who live outside of Hatay think that Hatay people know nothing but chop the meat and bake it.
However, Hatay cuisine is a cuisine with very delicious vegan and vegetarian dishes. Mahluta soup is a great vegan soup for example. In addition to this, Hatay cuisine is a kitchen that embraces vagans and vegetarians and makes you fall in love with their food. Some examples are hummus, zahter salad, olive salad, muhammara, fellah kofte.
Going back to Mahluta soup ... Mahluta soup is a kind of Hatay style lentil soup. If you like lentil soup very much but get tired of making it the same way, try mahluta soup. The biggest difference of Mahluta soup from classical lentil soup is that it contains rice and it is served granulated without using a blender.

Ingredients
- 1 cup of red lentils,
- 1/4 cup of rice,
- 1 onion,
- 1 tablespoon tomato paste,
- 5-6 tablespoons of olive oil,
- 2 tablespoons of lemon juice
- 1 teaspoon of cumin,
- Salt,
- 6 cups of water.
Preparation
- Chop the finely,
- Heat oil in a deep pan, add chopped onion and stir fry until tender,
- Add tomato paste and stir fry until smells good,
- Add washed and drained lentils, rice and water and mix,
- Cover the lid and cook on low heat until the lentils and rice are soft,
- Add lemon juice, cumin and salt, mix and remove from heat.
