Jerusalem Artichoke Soup Recipe

Ingredients
- 500 g jerusalem artichoke,
- 1 onion, chopped,
- 1 carrot,
- 1 tbsp flour,
- 3 tbsps vegetable oil,
- 1 cup milk,
- 5 cups water,
- Salt and pepper to taste.
Preparation
- Heat oil in a deep pan,
- Add into the onion and cook until tender,
- Peel and grate jerusalem artichokes and carrot and add into the pan,
- Sautee for 5-6 mins.,
- Add flour and sautee for a few mins. more,
- Add water and cook covered until the vegetables are tender,
- Add milk and cook for a few mins.,
- Add salt and pepper and remove from heat,
- Add chopped dill and stir.
