Jerusalem Artichoke Soup Recipe Jerusalem Artichoke Soup Recipe

Ingredients:

  • 500 g jerusalem artichoke,
  • 1 onion, chopped,
  • 1 carrot,
  • 1 tbsp flour,
  • 3 tbsps vegetable oil,
  • 1 cup milk,
  • 5 cups water,
  • Salt and pepper to taste.

Preparation:

  1. Heat oil in a deep pan,
  2. Add into the onion and cook until tender,
  3. Peel and grate jerusalem artichokes and carrot and add into the pan,
  4. Sautee for 5-6 mins.,
  5. Add flour and sautee for a few mins. more,
  6. Add water and cook covered until the vegetables are tender,
  7. Add milk and cook for a few mins.,
  8. Add salt and pepper and remove from heat,
  9. Add chopped dill and stir.
