Light Tabbouleh Recipe


  • 1/2 cup fine bulghur,
  • 3/4 cup of boiling water,
  • 1 tomato,
  • 1 cucumber,
  • A small bunch of fresh mint,
  • A small bunch of parsley,
  • 4-5 leaves of lettuce,
  • 2 stalks green onions,
  • Juice of a half lemon,
  • Salt.


  1. Combine the bulghur, water and a pinch of salt in a saucepan,
  2. Wait for 10 minutes to drain,
  3. Wash, dry and finely mince the green vegetables,
  4. Chop the tomatoes and cucumber in the size of a backgammon dice,
  5. Take a deep bowl mix well all ingredients.
