Leek Çalkama Recipe
I shared çalkama recipe last year. After my first try, the idea of trying different varieties was always in my mind. As someone who loves leek böreks, it is not surprising that the first variety I tried was leek. In fact, Çalkama is a kind of easy börek that don't keep your hands busy. When the greens come out and the leeks come in, it looks more like a börek.
The first çalkama recipe I made was plenty of greens. It was a perfect spring recipe. I also wanted a winter version with leek. Both are delicious recipes. You can have it for dinner, tea tables or breakfast.
Although leek çalkama is not a hand rolled leek börek, it is a food that can be made in a limited time and can meet the hunger for börek. When a little cheese is added to the soft cooked leek and these two are sandwiched between the crispy cornmeal bread, a tremendous flavor emerges.
Although leek çalkama is already a practical recipe, if you want to make it even more practical, you can roast the leeks one day in advance. In this way, the preparation time will be reduced by half. Although leek çalkama is very easy to prepare, unfortunately it takes some time to cook. Therefore, at least some time can be saved from the cooking time of the leek.
The çalkama dough has no yeast or baking powder. The top is crispy and the dough underneath is soft.

Leek Çalkama Recipe with Video
Ingredients
For the batter;
- 1.5 cups of cornmeal,
- 1.5 cups of flour,
- 1/2 cup of olive oil,
- 2+1/4 cups of water at room temperature,
- Salt to taste.
For the filling;
- 2 stalks (350 g) of leeks,
- 4 tablespoons of olive oil,
- 100 g Turkish white cheese,
- Salt to taste.
Preparation
- Finely chop the leek for the filling,
- Take it into a large pan and add olive oil and stir fry until soft,
- Add the cheese and salt and mix,
- For the batter, take olive oil, water and salt in a bowl,
- Add the cornmeal and flour gradually and whisk,
- Spread 2/3 of the mixture into a greased or lined with wax paper 40*32 cm baking dish,
- Spread the filling on top,
- Add 1/4 cup of water to the remaining batter and whisk,
- Spread the mixture on the filling,
- Bake in a preheated oven at 180 degrees until browned.
