Kidney Bean Salad Recipe

Serving : 4-6 Servings

Ingredients

  • 2 cups kidney beans,
  • 1.5 cups finely chopped parsley,
  • 1.5 cups finely chopped dill,
  • 1.5 cups finely chopped fresh mint,
  • 4 cornichons,
  • 4-5 roasted red peppers,
  • 2-3 tablespoons olive oil,
  • 2-3 tablespoons pomegranate molasses,
  • Salt.

Preparation

  1. Boil and drain the beans,
  2. Add the chopped parsley, dill and mint,
  3. Chop the cornichons and roasted peppers, and add to the beans,
  4. Add olive oil, salt and pomegranate molasses to taste and stir.
