Baked Olive Oil Pepper Dolmas Recipe
This recipe reminds me of summer for some reason. Maybe it's because I prefer it colder in summer. That's why I look at these photos and sigh, just in case summer comes soon. I don't know if it's because I was born in the summer or if there is another reason, but I am a summer person.
I need to see the sun above me in order to be truly happy. I need to breathe in that warm summer air to be full of life. It's almost like I'm missing in the winter. My arm wing is broken when there is no summer. As if all this weren't enough, I also live in a city like Ankara, which lives to the fullest in the winter, and in a district like Dikmen, which lives beyond the depths of the winter. I'm going to start lamenting that this is a game of my destiny, he took my summer, he gave me his winter.
We're halfway through the winter though. When January and February pass, the sun starts to show its face from the side in March. Although, we had a winter in Ankara where the snow did not melt until June two years ago. I don't even want to remember. I hope this year will be a year of writing. Now, if it doesn't snow, there will be no water, it will be dry, don't come with something. That is God's business. I'm just saying what's on my mind.

Baked Olive Oil Pepper Dolmas Recipe with Video
Ingredients
- 15 green bell peppers,
- 1.5 cups of rice,
- 1 large onion,
- 1/2 cup of olive oil,
- 2 tablespoons of pine nuts,
- 2 tablespoons of raisins,
- 1 teaspoon of cinnamon,
- 1 teaspoon of allspice,
- 1 teaspoon of black pepper,
- Salt,
- 2 teaspoons of sugar,
- 1 large tomato.
Preparation
- Add 1/4 cup of olive oil and pine nuts in a pan and stir over low heat for 5 mins,
- Add the finely chopped onions and cook for 5 more mins,
- Add the rice and stir for 2-3 mins,
- Add 2 teaspoons salt, sugar, all spice, cinnamon and black pepper, then stir,
- Add 2 cups of hot water and cook on medium heat until the rice absorbs all the water,
- Remove the seeds of the peppers,
- Make holes at the bottom using a knife,
- Stuff them loosely with the rice mixture,
- Put tomato slices on top and place on a baking dish,
- Mix together 2-3 cups water, 2 teaspoons salt and 1/4 cup of olive oil and pour over the peppers,
- Put the lid on, and bake in a 200 degrees Celsius oven for 1-1.5 hours,
- Take the lid off and keep baking for 15 more mins,
- Serve chilled.
