Stewed Kidney Beans with Olive Oil Recipe
Ingredients
- 2 cups kidney beans,
- 1 large potato,
- 1 large carrot,
- 1 onion,
- 1 large grated tomato,
- 1/4 cup olive oil,
- 1 teaspoon tomato paste,
- Salt,
- 2 teaspoons sugar.
Preparation
- Boil the kidney beans until slightly softened (they will cook more later),
- Add some olive oil in a pot and sauté the finely chopped onion until softened,
- Add the tomato paste and stir for 2 mins,
- Add the diced potato and carrot and cook on low heat for 5 mins,
- Add the grated tomato and cook for 5 more mins,
- Finally add the half-boiled kidney beans and add enough water to submerge everything,
- Cook until the beans, potatoes and carrots are fully softened,
- Remove from heat and add the salt and sugar, then stir,
- Serve chilled with freshly chopped parsley.
