Stewed Kidney Beans with Olive Oil Recipe

Ingredients

  • 2 cups kidney beans,
  • 1 large potato,
  • 1 large carrot,
  • 1 onion,
  • 1 large grated tomato,
  • 1/4 cup olive oil,
  • 1 teaspoon tomato paste,
  • Salt,
  • 2 teaspoons sugar.

Preparation

  1. Boil the kidney beans until slightly softened (they will cook more later),
  2. Add some olive oil in a pot and sauté the finely chopped onion until softened,
  3. Add the tomato paste and stir for 2 mins,
  4. Add the diced potato and carrot and cook on low heat for 5 mins,
  5. Add the grated tomato and cook for 5 more mins,
  6. Finally add the half-boiled kidney beans and add enough water to submerge everything,
  7. Cook until the beans, potatoes and carrots are fully softened,
  8. Remove from heat and add the salt and sugar, then stir,
  9. Serve chilled with freshly chopped parsley.
