Fresh Kidney Beans Stew Recipe
Serving : 6 Servings
Ingredients
- 1 kg kidney beans,
- 2 potatos, chopped,
- 2 carrots, chopped,
- 1 onion, chopped,
- 1 large tomato, grated
- 3-4 tbsps olive oil,
- 1 tbsp tomato paste,
- Salt.
Preparation
- Remove the beans from the shells, wash and drain,
- Add olive oil in a pot and sauté the finely chopped onion until softened,
- Add the tomato paste and stir for 2 mins,
- Add the diced potato and carrot and stir,
- Add the grated tomato and cook for 2-3 mins,
- Add kidney beans and stir well,
- Finally add enough water to submerge everything,
- Cook until the beans, potatoes and carrots are fully softened,
- Remove from heat and add the salt, then stir,
- Serve chilled with freshly chopped parsley.
