Granola Bars Recipe
Granola bar recipe has been on my to-share list for years. But I haven't had the chance to share it because of various reasons. A miracle has happened recently and one morning I woke up to find that there was no seasonal recipe to make, I had all the ingredients I wanted at home and I knew exactly what I wanted to make. There is a time for everything, you know, I realised that the time for the granola bar came that day.
I knew from the beginning that I did not want to make something dry, rich in oats and tasteless. That's why I didn't cut back on the ingredients. I used thin rolled and thick rolled oats in half. It would be doughy if I used all of it thin rolled, and very oat-mealy if I used all thick rolled. This ratio allowed me to get the perfect consistency just as I had imagined. The flavor I wanted was mostly peanut butter and chocolate. But I didn't want dried fruits to be left in the background. That's why I used them in an amount that cannot be overlooked. I used walnuts, pecans and hazelnuts. You can replace them with pistachios or almonds or use them as extra. Just make sure that it doesn't exceed 1.5 cups in total to keep its consistency.
As I mentioned above, I used them because I wanted peanut butter and chocolate flavors to be dominant. But if you want them to be neutral like granola, you can use butter instead of peanut butter and use dried fruits such as raisins and dried apricots instead of chocolate. Going back to our original recipe... I also used a little pistachio to add some color to the recipe. But I just sprinkled it on top, so it wouldn't get lost in the bars. As you know, it is not a very cheap ingredient. In the same way, I used extra chocolate chips for the toppping to contribute to the image. It turned out to be such a beautiful image that it was worth the effort. If you don't want to deal with it, you can skip these ingredients and steps.

Granola Bars Recipe with Video
Ingredients
- 1 cup of thin rolled oatmeal,
- 1 cup of thick rolled oatmeal,
- 1/2 cup of coarsely ground walnuts,
- 1/2 cup coarsely ground pecans,
- 1/2 cup of coarsely ground hazelnuts,
- A handful of coconuts
- 3 tablespoons of honey,
- 2 tablespoons of peanut butter,
- 100 g chocolate chips,
- 2 tablespoons of coarsely ground pistachios,
- Extra 2 tablespoons of chocolate chips.
Preparation
- Spread oatmeal, walnuts, pecans and hazelnuts on a baking tray,
- Roast slightly, stirring occasionally, in a preheated oven at 180 degrees and take it out of the oven,
- Add the coconut and mix,
- Take the honey and peanut butter in a sauce pan and melt them on low heat,
- Add the honey and peanut butter mixture to the oatmeal mixture, mix, and let it cool,
- Add chocolate chips and mix,
- Pour the mixture into a 16*21 cm container covered with plastic wrap and smooth it over,
- Sprinkle with pistachios and extra chocolate chips and press,
- Place it in the fridge and let it rest for an hour,
- Slice and serve.
