Chocolate Granola Cups Recipe

Chocolate Granola Cups Recipe came about at a moment I never expected. I was actually just planning to prepare granola bowls for friends coming over for breakfast. At the last minute, I decided to turn these bowls/cups from a light breakfast option into a light dessert that could be enjoyed after breakfast.
In fact, this decision happened so quickly that I only now realize I forgot the original recipe I was inspired by was called granola bowls, and I ended up naming these granola cups instead. As you know, granola is a breakfast food made by combining oats with various ingredients and toasting them.
By enriching it with different ingredients and using different methods, it’s also possible to create recipes like granola bars or even granola cakes. As someone who loves oats in every form, I also love granola in all its variations. That’s why it was one of the first recipes that came to mind when preparing a breakfast menu for my friends. Its lightness also plays a big role in that choice.
Nowadays, people (at least those around me) are more conscious about nutrition, and since many are concerned about weight control, they no longer eat as if there’s no tomorrow at gatherings. I’ve always tried to keep my menus at a reasonable level anyway, because when I attend gatherings, I don’t enjoy eating to the point of discomfort, so I try not to put others in that position either. Seeing how much more mindful people around me have become, I’ve started simplifying and lightening my menus even further. For example, I prefer sugar-free desserts or light snacks instead of heavy sweets. Even if I didn’t do this, people would naturally gravitate toward the least sugary and lightest options on the table, leaving the rest untouched. So now, I don’t tire myself unnecessarily.
These cups, which can easily be prepared a day in advance, are perfect for breakfast gatherings in that sense. They do soften slightly due to the chocolate cream, but not to an uncomfortable degree. However, if you want them to stay as crispy as freshly baked, you can prepare the cups the day before and add the chocolate cream just before serving.

Ingredients
- 2 1/2 cups rolled oats,
- 1 egg white,
- 1/2 banana,
- 1 tablespoon honey,
- 1 tablespoon butter, at room temperature,
- 1 tablespoon chia seeds.
For the filling:
- 1 cup milk,
- 1 egg yolk,
- 1 heaped teaspoon starch,
- 1 tablespoon sugar,
- 100 g chocolate,
- 1/2 banana,
- 6 strawberries,
- Ground pistachios.
Preparation
- Mash the banana and butter in a deep bowl,
- Add the egg white, honey, and chia seeds, and mix until smooth,
- Gradually add the oats, mixing and pressing as you go,
- Divide the mixture into 6 greased metal muffin cups,
- Bake in a preheated oven at 190°C (375°F) until the edges are golden,
- For the chocolate cream, whisk together the milk, egg yolk, sugar, and starch in a saucepan,
- Cook over medium heat, stirring constantly until thickened,
- Remove from heat, add the chocolate, and stir until melted,
- Slice the banana and place one slice into each cup,
- Divide the chocolate cream among the cups,
- Top with sliced strawberries and ground pistachios.
