Blueberry Pepeçura Recipe

Pepeçura is one of the hidden gems of the Black Sea cuisine. Traditionally made during grape season with the region's wonderfully fragrant grapes and cornmeal, a staple ingredient in the area, it is an incredibly light dessert. Although I'm not from the Black Sea region myself, I've always loved pepeçura. A few days ago, I found myself wishing grape season would arrive so I could make it again. Then I thought, why wait for grapes? Surely there must be a good alternative. After some consideration, I decided that blueberries would be the best substitute, not only in terms of flavor but also texture and color, so I got to work.
The texture and color turned out exactly as they should. If I'm being completely honest, though, the flavor wasn't quite as remarkable as the classic version. Don't get me wrong, it wasn't disappointing at all. It was absolutely delicious. It simply didn't achieve the almost magical depth of flavor that traditional pepeçura has despite being made with such simple ingredients. That's one of the things that makes the original so special. Even so, when you're craving pepeçura outside the grape season, this blueberry version is an excellent alternative.
Another wonderful thing about pepeçura is that it is naturally gluten free and lactose free, making it a fantastic dessert for anyone with gluten and/or lactose intolerance.
Since I prefer my desserts only lightly sweetened, I kept the sugar to a moderate level. Before removing the dessert from the heat, taste it and add a little more sugar if you'd like it sweeter.

Ingredients
- 500 g blueberries,
- 5 cups room temperature water,
- 1/2 cup sugar,
- 3 tbsp cornmeal,
- 3 tbsp starch.
Preparation
- Wash the blueberries and place them in a saucepan,
- Add 1 liter of water and cook until the blueberries are soft,
- Blend until smooth, then strain through a fine-mesh sieve,
- Transfer the strained blueberry juice to a saucepan. Add the sugar, cornmeal, and starch, and whisk until well combined,
- Place over medium heat and cook, stirring constantly, until the mixture thickens,
- Divide the mixture among serving bowls,
- Once cooled and fully set, garnish as desired and serve.
