Cheese Filled Pastry Recipe

Serving : 15-20 Pieces

Ingredients

  • 2 eggs (1 egg yolk to brush on top),
  • 1 cup warm milk,
  • 1 cup warm water,
  • 150 gr. butter (melted),
  • 6-7 cups flour,
  • 10 gr. rapid-rise yeast,
  • 2 tablespoon granulated sugar,
  • 2 teaspoons salt,
  • For filling; crumbled feta cheese.

Preparation

  1. Place 5 cups of flour in a large bowl,
  2. Stir in yeast, sugar and salt,
  3. Make a cavity in the centre and add, 1 egg, 1 egg yolk and melted butter,
  4. Start mixing with your hands while slowly adding warm water and milk,
  5. Finally add last 2 cups of flour slowly (you may not need all of it) and knead until you get a non-sticky dough,
  6. Cover the dough with kitchen towel and let it rest for 45 mins to rise,
  7. After it has risen, deflate the dough and knead for 1-2 mins,
  8. Pull small orange size pieces from the dough and press them flat on your palm,
  9. Place some cheese in the centre and fold it in half and press,
  10. Place on a baking sheet lined with parchment paper,
  11. Let rest for 15-20 more mins,
  12. Whisk together 1 egg yolk and 1 teaspoon of sugar, then brush this mixture on top of the pastries,
  13. Bake at 190 degrees celsius preheated oven until the top is golden brown.
