Celery Root Casserole Recipe


Serving : 4 Servings

Ingredients

  • 3 medium sized celery,
  • 2 carrots,
  • 4 tablespoons vegetable oil,
  • 2 tbsps plain yogurt,
  • 1 tablespoon flour,1 egg yolk,
  • 1/2 lemon juice,
  • 3 cups of boiling water,
  • Salt to taste.

Preparation

  1. Peel and chop the celery and carrots,
  2. Heat the oil in a large pan,
  3. Add carrots and celery, cook constantly stirrin for 1-2 minutes,
  4. Cover the lid, lower the heat and cook until the vegetables are softened,
  5. Add water and mix and cover again and cook until tender,
  6. In a separate bowl beat yogurt, egg yolk, lemon juice and flour together,
  7. Take  a scoop of water, add into the mixture slowly and beat it quickly (otherwise it will curdle),
  8. Slowly pour back the pot and stir again quickly,
  9. Cook for 1-2 mins., constantly stirring,
  10. Add salt, stir and remove from heat.
