Celery Root Casserole Recipe
Serving : 4 Servings
Ingredients
- 3 medium sized celery,
- 2 carrots,
- 4 tablespoons vegetable oil,
- 2 tbsps plain yogurt,
- 1 tablespoon flour,1 egg yolk,
- 1/2 lemon juice,
- 3 cups of boiling water,
- Salt to taste.
Preparation
- Peel and chop the celery and carrots,
- Heat the oil in a large pan,
- Add carrots and celery, cook constantly stirrin for 1-2 minutes,
- Cover the lid, lower the heat and cook until the vegetables are softened,
- Add water and mix and cover again and cook until tender,
- In a separate bowl beat yogurt, egg yolk, lemon juice and flour together,
- Take a scoop of water, add into the mixture slowly and beat it quickly (otherwise it will curdle),
- Slowly pour back the pot and stir again quickly,
- Cook for 1-2 mins., constantly stirring,
- Add salt, stir and remove from heat.
