Cauliflower Casserole Recipe

Ingredients:

  • 1 small head cauliflower,
  • 200 g ground beef,
  • 3 carrots,
  • 1 onion,
  • 1/3 cup olive oil,
  • 1 tablespoon tomato paste,
  • 2 teaspoons paprika,
  • Water,
  • Salt,
  • Black pepper.

Preparation:

  1. Break the cauliflower into florets and wash well,
  2. Peel the carrots and slice,
  3. Finely chop the onion and sauté in olive oil until translucent,
  4. Add the ground beef and cook until it changes colour,
  5. Add the tomato paste and stir for 2 mins,
  6. Add the paprika and stir,
  7. Add the carrots and cauliflower and stir,
  8. Cook over medium heat for 5 mins, then add enough water to submerge,
  9. Cook until the cauliflower and carrots soften,
  10. Add salt and black pepper to taste and stir without breaking the vegetables,
  11. Transfer into a baking casserole (preferably into a clay cooking pot),
  12. Broil in the oven until the top is slightly burnt.
