Cauliflower Casserole Recipe
Serving : 4 Servings
Ingredients
- 1 small head cauliflower,
- 200 g ground beef,
- 3 carrots,
- 1 onion,
- 1/3 cup olive oil,
- 1 tablespoon tomato paste,
- 2 teaspoons paprika,
- Water,
- Salt,
- Black pepper.
Preparation
- Break the cauliflower into florets and wash well,
- Peel the carrots and slice,
- Finely chop the onion and sauté in olive oil until translucent,
- Add the ground beef and cook until it changes colour,
- Add the tomato paste and stir for 2 mins,
- Add the paprika and stir,
- Add the carrots and cauliflower and stir,
- Cook over medium heat for 5 mins, then add enough water to submerge,
- Cook until the cauliflower and carrots soften,
- Add salt and black pepper to taste and stir without breaking the vegetables,
- Transfer into a baking casserole (preferably into a clay cooking pot),
- Broil in the oven until the top is slightly burnt.
