Walnut And Dried Apricot Biscotti Recipe
Serving : 15-20 Pieces
Ingredients
- 2 eggs (1 egg white will be brushed on top),
- 100 gr butter,
- 2 cups + 1 tablespoon flour,
- 3/4 cup sugar,
- 2 teaspoons baking powder,
- 2 teaspoons vanilla extract,
- 1 pinch salt,
- 1/2 teaspoon cinnamon,
- 1 cup coarsely ground walnuts,
- 10 dried apricots (cut into cubes).
Preparation
- Melt the butter and let cool down,
- Whisk together 1 egg, 1 egg yolk, melted butter and sugar,
- Add in the flour, baking powder, vanilla extract, cinnamon, salt and start mixing with your hands,
- Incorporate in the walnuts and dried apricots and knead until you get a sticky homogenous dough,
- Form the dough into a long rectangle on a baking sheet lined with parchment and brush the surface with egg white,
- Bake at 180 degrees celsius preheated oven for 35 mins,
- Remove from the oven and slice,
- Place the slices on cut side down on the baking sheet and bake at 170 degrees celsius for another 15 mins.
