Walnut And Dried Apricot Biscotti Recipe Walnut And Dried Apricot Biscotti Recipe

Ingredients:

  • 2 eggs (1 egg white will be brushed on top),
  • 100 gr butter,
  • 2 cups + 1 tablespoon flour,
  • 3/4 cup sugar,
  • 2 teaspoons baking powder,
  • 2 teaspoons vanilla extract,
  • 1 pinch salt,
  • 1/2 teaspoon cinnamon,
  • 1 cup coarsely ground walnuts,
  • 10 dried apricots (cut into cubes).

Preparation:

  1. Melt the butter and let cool down,
  2. Whisk together 1 egg, 1 egg yolk, melted butter and sugar,
  3. Add in the flour, baking powder, vanilla extract, cinnamon, salt and start mixing with your hands,
  4. Incorporate in the walnuts and dried apricots and knead until you get a sticky homogenous dough,
  5. Form the dough into a long rectangle on a baking sheet lined with parchment and brush the surface with egg white,
  6. Bake at 180 degrees celsius preheated oven for 35 mins,
  7. Remove from the oven and slice,
  8. Place the slices on cut side down on the baking sheet and bake at 170 degrees celsius for another 15 mins.

  1. Quite tasty and love that I didn’t even have to take out the mixer. For North Americans: used a stick of butter (113 g), baked at 355 F and 325 F (to crisp).
