Zucchini Pizza Recipe
Serving : 4-6 Servings
Ingredients
- 2 cups flour,
- 3/4 - 1 cup warm water,
- 2 teaspoons rapid-rise yeast,
- 2 teaspoons granulated sugar,
- 2 teaspoons salt,
- 1 large green zucchini,
- 5-6 sun-dried tomatoes,
- 1 cup crumbled feta cheese,
- 1 cup grated cheddar / swiss cheese,
- 2 tablespoons olive oil.
Preparation
- Mix together the flour, yeast, sugar and salt in a large bowl,
- Add the warm water slowly while constantly mixing and kneading with your hands until you get a soft smooth dough,
- Cover the dough with kitchen towel and let rest for 45 mins,
- Roll the risen dough out into a thin circle on a baking dish lined with parchment paper,
- Mix together the crumbled feta and grated cheddar and sprinkle on top of your pizza,
- Submerge the sun-dried in hot water for 10 mins, drain and chop,
- Distribute them evenly over the cheese,
- Cut the zucchini into thin slices and place on top of your pizza,
- Brush some olive oil on top of the zucchini slices,
- Bake the pizza in a 180 degrees Celsius oven until the crust is golden brown and the zucchini slices are softened.
