Zucchini Pizza Recipe Zucchini Pizza RecipeIngredients:

  • 2 cups flour,
  • 3/4 – 1 cup warm water,
  • 2 teaspoons rapid-rise yeast,
  • 2 teaspoons granulated sugar,
  • 2 teaspoons salt,
  • 1 large green zucchini,
  • 5-6 sun-dried tomatoes,
  • 1 cup crumbled feta cheese,
  • 1 cup grated cheddar / swiss cheese,
  • 2 tablespoons olive oil.

Preparation:

  1. Mix together the flour, yeast, sugar and salt in a large bowl,
  2. Add the warm water slowly while constantly mixing and kneading with your hands until you get a soft smooth dough,
  3. Cover the dough with kitchen towel and let rest for 45 mins,
  4. Roll the risen dough out into a thin circle on a baking dish lined with parchment paper,
  5. Mix together the crumbled feta and grated cheddar and sprinkle on top of your pizza,
  6. Submerge the sun-dried in hot water for 10 mins, drain and chop,
  7. Distribute them evenly over the cheese,
  8. Cut the zucchini into thin slices and place on top of your pizza,
  9. Brush some olive oil on top of the zucchini slices,
  10. Bake the pizza in a 180 degrees Celsius oven until the crust is golden brown and the zucchini slices are softened.
