Pasta With Tomato Sauce and Chicken Broth Recipe

Serving : 4 Servings

Ingredients

  • 250 g pasta,
  • 1,5 lt. water,
  • 2 cups chicken broth,

Tomato sauce;

  • 1 onion,
  • 1 cup tomato puree (2 medium tomatoes),
  • 1 tablespoon tomato paste,
  • 2 teaspoons paprika,
  • 1/4 cup olive oil,
  • 1 cup water,
  • 2 teaspoons dried mint,
  • 2 teaspoons thyme,
  • Salt to taste.

Preparation

  1. Boil the water and chicken broth in a large pot, then add some salt,
  2. Cook the pasta,
  3. In the meantime, heat the oil in a large saucepan,
  4. Sauté the finely chopped onion on medium heat until softened,
  5. Stir in the tomato paste and cook for 2 mins,
  6. Add the paprika and stir,
  7. Pour in the tomato puree (grated tomatoes) and cook on low heat for 5 mins,
  8. Stir in the salt and water, then cook for 5 more mins,
  9. Add in the dried mint and thyme, stir and remove from heat,
  10. Drain the pasta and combine it with the tomato sauce,
  11. Grate some cheese on top before serving and decorate with parsley before serving.
