Pasta With Tomato Sauce and Chicken Broth Recipe

Ingredients
- 250 g pasta,
- 1,5 lt. water,
- 2 cups chicken broth,
Tomato sauce;
- 1 onion,
- 1 cup tomato puree (2 medium tomatoes),
- 1 tablespoon tomato paste,
- 2 teaspoons paprika,
- 1/4 cup olive oil,
- 1 cup water,
- 2 teaspoons dried mint,
- 2 teaspoons thyme,
- Salt to taste.
Preparation
- Boil the water and chicken broth in a large pot, then add some salt,
- Cook the pasta,
- In the meantime, heat the oil in a large saucepan,
- Sauté the finely chopped onion on medium heat until softened,
- Stir in the tomato paste and cook for 2 mins,
- Add the paprika and stir,
- Pour in the tomato puree (grated tomatoes) and cook on low heat for 5 mins,
- Stir in the salt and water, then cook for 5 more mins,
- Add in the dried mint and thyme, stir and remove from heat,
- Drain the pasta and combine it with the tomato sauce,
- Grate some cheese on top before serving and decorate with parsley before serving.
