Cyprus Dessert Recipe

Ingredients:

For Cake;

  • 2 eggs,
  • 2 tbsps sugar,
  • 1,5 cup milk,
  • 1/2 cup vegetable oil,
  • 2 cups bread crumbs,
  • 1/2 cup grated coconut,1/2 cup chopped walnuts,
  • 5 dried figs, finley chopped,
  • 10 g baking powder.

For Syrup;

  • 1 cup sugar,
  • 1,5 cup water.

For Pudding;

  • 4 cups milk,
  • 1 cup flour,
  • 1 egg,
  • 1 cup sugar,
  • 1 tbsp butter,
  • 20 g sugar vanilin.

For Topping;

  • 1/2 cup grated coconut.

Preparation:

  1. For syrup combine water and sugar in a sauce pan,
  2. Cook constantly stirring, until boiling,
  3. Cook in low heat for 10 mins. after it starts to boil (you don’t need to stir),
  4. For cake beat eggs and sugar untşk creamy,
  5. Add milk and oil and beat,
  6. Add bread crumbs and baking powder and stir with a spatula  (it will be a bit solid),
  7. Add coconut, walnut and figs and stir,
  8. Grease a 30*22 cm baking pan and pour the dough,
  9. Bake in a 180 C degrees pre-heated oven until toothpick comes clean,
  10. While cake is baking prepare the pudding,
  11. Beat milk, egg and flour in a sauce pan,
  12. Cook constantly stirring until set,
  13. Remove from heat and add butter and sugar vanilin, beat,
  14. Beat frequantly until the pudding come to room temperature,
  15. Remov the cake from oven and set aside for 10 mins.,
  16. Then pour syrup over,
  17. Pour pudding over,
  18. Top with grated coconuts,
  19. Set aside for 2 hours in the fridge before serving.
