Pepper Potato Croquettes Recipe

Ingredients:

  • 3 large potatoes,
  • 2 red bell peppers,
  • 2 egg,
  • 3 table spoons bread crumbs,
  • 1/2 cup chopped parsley,
  • Salt to taste,
  • 1 cup bread crumbs to cover,
  • Vegetable oil to fry.

Preparation:

  1. Boil the potatoes until tender, drain and peel,
  2. Grill red peppers directly on the flames of your burner until they all become black and peel blackened skins,
  3. Smash potatoes and chop bell peppers,
  4. In a large bowl mix smashed potatoes, chopped peppers, 1 egg, 3 table spoons of bread crumbs, parsley and salt well,
  5. Make thick finger like pieces,
  6. In another bowl beat the remaining egg,
  7. Sop the croquettes first in egg then cover with bread crumbs,
  8. In a large skillet pan heat vegetable oil,
  9. Fry croquettes,
  10. Turn upside down and fry the other side,
  11. Remove to a sieve to drain the extra oil.
