Turkish Princess Biscuit Sandwiches

Turkish Princess Biscuit Sandwiches

Ingredients:

For Biscuits;

  • 2 eggs,
  • 2 tbsps butter,
  • 3 cups flour,
  • 1 tbsp sugar,
  • 2 tbsps honey,
  • 1 tsp baking soda.

For Cream Filling;

  • 2 cups milk,
  • 2 tbsp corn starch,
  • 2 tbsp sugar,
  • 10 gr vanilla sugar.

For Topping;

  • 100 gr chocolate, chopped,
  • 1/4 tbsp butter,
  • 3 tbsp milk.

For Edges;

  • Grated coconut.

Preparation:

  1. For biscuits melt and cool the butter until room temperature,
  2. In a small sauce pan mix honey and baking soda and cook until it becomes fluffy and double in size,
  3. In a deep mixing bowl beat eggs and sugar,
  4. Add butter and beat again,
  5. Add honey+baking soda mixture and beat,
  6. Add flour step by step and knead until it becomes a ball,
  7. Set aside and wait 5-10 mins.,
  8. Divide the dough into 6 equal pieces,
  9. Shape each piece into a ball,
  10. On a lightly floured surface, roll out the balls thinly into a circle,
  11. Cut them with biscuit cutter,
  12. Using a fork, prick the biscuits in several places,
  13. Place a parchement paper into a baking sheet,
  14. Transfer the biscuits on parchement paper,
  15. Bake in a 180 C preheated oven until golden on top,
  16. Set aside and wait until they become to room temperature,
  17. For cream filling in a skillet whisk milk, sugar and starch,
  18. Stir and cook until it gets a dense form,
  19. Add butter and stir until melts and remove from heat,
  20. Add vanilla sugar and beat,
  21. Set aside until cold,
  22. Place a scoop of cream filling on one biscuit and place another biscuit on top of the filling, do the same for all of them,
  23. Dip the edges in grated coconuts all around,
  24. For topping half-fill a saucepan with water and bring to a simmer,
  25. Place a bowl on top, making sure it doesn’t touch water,
  26. Put chocolate, milk and butter in the inner bowl,
  27. Stir until the chocolate melts,
  28. Top all the biscuits with this mixture.
