Turkish Princess Biscuit Sandwiches

Ingredients
For Biscuits;
- 2 eggs,
- 2 tbsps butter,
- 3 cups flour,
- 1 tbsp sugar,
- 2 tbsps honey,
- 1 tsp baking soda.
For Custard Filling;
- 2 cups milk,
- 2 tbsp corn starch,
- 2 tbsp sugar,
- 1 tsp butter,
- 10 g ground vanilla.
For Topping;
- 100 g chocolate,
- 100 ml heavy cream.
For Edges;
- Grated coconut.
Preparation
- For biscuits melt and cool the butter until room temperature,
- In a small sauce pan mix honey and baking soda and cook until it becomes fluffy and double in size,
- In a deep mixing bowl beat eggs and sugar,
- Add butter and beat again,
- Add honey+baking soda mixture and beat,
- Add flour step by step and knead until it becomes a ball,
- Set aside and wait 5-10 mins.,
- Divide the dough into 6 equal pieces,
- Shape each piece into a ball,
- On a lightly floured surface, roll out the balls thinly into a circle,
- Cut them with biscuit cutter,
- Using a fork, prick the biscuits in several places,
- Place a parchement paper into a baking sheet,
- Transfer the biscuits on parchement paper,
- Bake in a 180 C preheated oven until golden on top,
- Set aside and wait until they become to room temperature,
- For custard filling in a skillet whisk milk, sugar and starch,
- When the milk heats add butter and vanilla and stir,
- Stir and cook until it gets a dense form, remove from heat,
- Set aside until cold,
- For topping heat heavy cream,
- Add chocolate and stir until melts,
- Place a scoop of custard filling on one biscuit and place another biscuit on top of the filling, do the same for all of them,
- Dip the edges in grated coconuts all around,
- Top all the biscuits with the chocolate sauce.
