Turkish Princess Biscuit Sandwiches

Serving : 17 Pieces

Ingredients

For Biscuits;

  • 2 eggs,
  • 2 tbsps butter,
  • 3 cups flour,
  • 1 tbsp sugar,
  • 2 tbsps honey,
  • 1 tsp baking soda.

For Custard Filling;

  • 2 cups milk,
  • 2 tbsp corn starch,
  • 2 tbsp sugar,
  • 1 tsp butter,
  • 10 g ground vanilla.

For Topping;

  • 100 g chocolate,
  • 100 ml heavy cream.

For Edges;

  • Grated coconut.

Preparation

  1. For biscuits melt and cool the butter until room temperature,
  2. In a small sauce pan mix honey and baking soda and cook until it becomes fluffy and double in size,
  3. In a deep mixing bowl beat eggs and sugar,
  4. Add butter and beat again,
  5. Add honey+baking soda mixture and beat,
  6. Add flour step by step and knead until it becomes a ball,
  7. Set aside and wait 5-10 mins.,
  8. Divide the dough into 6 equal pieces,
  9. Shape each piece into a ball,
  10. On a lightly floured surface, roll out the balls thinly into a circle,
  11. Cut them with biscuit cutter,
  12. Using a fork, prick the biscuits in several places,
  13. Place a parchement paper into a baking sheet,
  14. Transfer the biscuits on parchement paper,
  15. Bake in a 180 C preheated oven until golden on top,
  16. Set aside and wait until they become to room temperature,
  17. For custard filling in a skillet whisk milk, sugar and starch,
  18. When the milk heats add butter and vanilla and stir,
  19. Stir and cook until it gets a dense form, remove from heat,
  20. Set aside until cold,
  21. For topping heat heavy cream,
  22. Add chocolate and stir until melts,
  23. Place a scoop of custard filling on one biscuit and place another biscuit on top of the filling, do the same for all of them,
  24. Dip the edges in grated coconuts all around,
  25. Top all the biscuits with the chocolate sauce.
