Turkish Kofte Stew Recipe
Serving : 4 Servings
Ingredients
- 250 g medium fat ground meat,
- 1 small egg,
- 1 onion,
- 2 tablespoons breadcrumbs,
- 1 tablespoon chopped parsley,
- A pinch of black pepper and cumin,
- 1 tablespoon tomato paste,
- 1/2 tsp ground chilli,
- 2 potatoes, chopped,
- 2 carrots, chopped,
- 1 water glass canned peas,
- Salt,
- Vegetable oil,
- 2-3 cups of boiling water.
Preparation
- Cut the onion into two halves, grate one half and chop the other,
- For meatballs combine minced meat, egg, bread crumbs, grated onion, parsley, black pepper, cumin and salt in deep bowl and knead,
- Make walnut sized meatballs,
- In a large pan, heat vegetable oil,
- Add into the meatballs and fry all over, remove into a strainer,
- In the meantime, heat 3-4 tbsps vegetable oil in a deep
- Add chooped onions and roast until tender,
- Add the potatoes and carrots and stir,
- Cover the lid and cook for a few mins.,
- Add the tomato paste and roast until smells good,
- Add the ground chilli and stir,
- Add water and stir,
- Cover the pot and cook until the potatoes are softened,
- Add the meatballs and peas, stir, cover the lid and cook for a few mins.,
- Add salt, stir and remove from the heat.
