Harput Kofte Recipe
Harput kofte is a delicious dish of Elazig (a beautiful city in south east of Turkey) cuisine that is less appreciated and not as famous as it deserves. Bulgur koftes are not something we have seen for the first time. We have many kofte recipes in which ground beef and bulgur are used together or made only with bulgur.
Although it is not the first thing that comes to mind when people think of koftes with bulgur, içli köfte is undoubtedly the hottest item in this category. Ground beef and bulgur are used together in içli köfte. Sini koftesi, which we can call the horizontal version of içli köfte, is also one of the koftes in which bulgur and ground meat are used together. The legend that bulgur is used alone is fellah kofte recipe. Another example in this category is pea stew with bulgur koftes. A good example of a dish that combines bulgur meatballs and meat is the basalla recipe from Adıyaman cuisine.
In Harput koftesi, bulgur and ground beef are kneaded together. Bulgur is kind of used instead of breadcrumbs/bread crumbs in the traditional turkish kofte recipe. But unlike breadcrumbs, bulgur swell while boiling and soften the meatballs. In this way, when the meatballs are cooked, they soften like Turkish delight. But this is not the main thing that makes Harput koftesi Harput koftesi. The dried basil used in the sauce of the kofte is what gives the kofte its real flavor.
But that doesn't mean that it will be very delicious if you put basil in any kofte. The reason why Harput kofte is so delicious and flavorful is all the other ingredients, preparation method and dry basil.

Ingredients
- 500 g low-fat ground beef,
- 1 cup fine/meatball bulgur,
- 1 onion,
- 1 egg,
- 1 teaspoon of dried basil,
- 1 teaspoon of paprika,
- 1 handful of chopped parsley,
- Salt.
For the sauce;
- 1 tablespoon of butter,
- 1 tablespoon of tomato paste,
- 1 tablespoon of chili paste,
- 1 teaspoon of dried basil,
- 5 cups of water,
- Salt.
Preparation
- Grate the onion,
- Take the ground beef, bulgur, grated onion, egg, basil, red pepper, parsley and salt in a deep bowl and knead until combined well,
- Take small pieces, roll into balls and make small holes on them by pressing on top of them with your index finger,
- In another pan, melt the butter, add the tomato paste and stir fry until it smells,
- Add water and salt and mix,
- After it starts to boil, add the koftes part by part and mix,
- Add the basil and mix,
- Close the lid and cook on low heat until the koftes swell.
