Tahini Cauliflower Salad Recipe

Ingredients:

  • 4 cups of cauliflower, split into tiny florets,
  • 7-8 pickles, chopped,
  • 1 cup canned corn,
  • 2 red peppers, roasted, peeled, chopped,
  • 1 handful of parsley, chopped,
  • 3 tbsp olive oil,
  • Juice of 1/2 lemon,
  • 1 clove of garlic, minced,
  • 3 tsps honey,
  • 1 tbsp tahini,
  • 1 tsp cumin,
  • Salt to taste.

Preparation:

  1. Cook cauliflowers in steam or boiling water for 7-8 mins.,
  2. In a large bowl combine cauliflower, pickles, pepper and corn,
  3. In a different bowl mix olive oil, honey, tahini, garlic, cumin and salt together,
  4. Pour the sauce over vegetables,
  5. Set aside in the fridge for 2 hours,
