Tahini Cauliflower Salad Recipe

Ingredients

  • 500 g cauliflower, split into tiny florets,
  • 1 carrot,,
  • 1/2 cup canned corn,
  • 1 handful of parsley, chopped,

For Seasoning;

  • 1/2 cup tahini,
  • 1/2 lemon juice,
  • 1/2 cup water,
  • 1/2 tsp sugar,
  • 1 clove of garlic,
  • 1/2 teaspoon ground sweet chilli,
  • 1/2 teaspoon of cumin,
  • Salt.

Preparation

  1. Cook cauliflowers and peeled carrot in steam or boiling water until tender, drain and let cool,
  2. For seasoning grate the garlic or chop finely,
  3. Beat all ingredients in a bowl,
  4. In a different bowl mix cauliflower chopped carrot, canned corn and most of the chopped parsley,
  5. Pour the seasoning over vegetables and mix well,
  6. Sprinkle over the rest of the parsley.
