Cauliflower Hummus Recipe
I've always liked cauliflower and tahini very much together, but for some reason it never occurred to me to make hummus from these two before. When I saw cauliflower puree in a recipe recently, the idea of this hummus suddenly came to my mind. When I think of things like this that I am sure I will love, I want to try and taste them as soon as possible. That's why I tried this recipe immediately. It turned out to be great, just as I predicted.

Cauliflower Hummus Recipe with Video
Ingredients
- 600 g of cauliflower,
- 3 tablespoons of tahini,
- Juice of 1/2 lemon,
- 2 tablespoons of olive oil,
- 1/2 teaspoon of cumin,
- 1 clove of garlic,
- Salt to taste,
- For topping olive oil, paprika, parsley and red pepper flakes, etc.
Preparation
- Take the cauliflower in a pot, add 500 ml of water and simmer until the cauliflower becomes soft,
- Strain the water and let it cool,
- Put the cooled cauliflower, tahini, lemon juice, olive oil, cumin, garlic and salt into a food processor or blender and blend until it reaches a smooth consistency,
- Place it on a serving plate and drizzle with olive oil, paprika, parsley and pepper flakes.

We don't like tahini, so I tweaked the recipe by slicing garlic and sautéing in a little olive oil with a drop of sesame oil before adding the cauliflower and salt. Cooled the drained vegetables and added olive oil, thick yoghurt, lemon juice, cumin and coriander before blending. No extra salt needed. Beautiful smooth texture and tastes like regular humus!
