Sun Dried Tomatoes Muffins Recipe
Serving : 12-15 Muffins
Ingredients
- 2 eggs,
- 1 cup of milk,
- 1/2 cup vegetable oil,
- 7-8 slices of dried tomatoes,
- 1 cup of crumbled feta cheese or cottage cheese,
- 1 tbsp sunflower seeds,
- 2 cups of flour,
- 10 g baking powder,
- 1 teaspoon salt.
Preparation
- Put tomato slices into boiling water and set aside for 20 minutes,
- Drain and chop finely,
- Beat the eggs with the salt,
- Add into milk and vegetable oil and mix,
- Add flour and baking powder, mix well,
- Add into cheese, chopped tomatoes and sunflower seeds and stir,
- Share the batter into muffin cups,
- Bake in a preheated oven at about 170 C degrees until golden.
