- 1 zucchini,
- 1 carrot,
- 1 red pepper,
- 1/2 cup canned corn,
- Juice of 1/2 lemon,
- 1 tbsp olive oil,
- 2 cloves of garlic,
- Salt to taste.
- Peel and cut the zucchini and carrot into slices,
- Chop the red pepper in the same size,
- Place the vegetables on a steamer and cook 10 mins.,
- Place cooked vegetables, corn, lemon juice, smashed garlics and salt in a deep bowl and combine well.
