Spinach Lasagna Roll-ups Recipe
Serving : 8 Pieces
Ingredients
- 8 lasagna noodles,
- 500 g finely chopped baby spinach,
- 1 onion,
- 2 tbsps tomato paste,
- 2 cups grated tomatos,
- 1 cup cottage cheese,
- 2/3 cup grated Parmesan cheese,
- 6 tbsps vegetable oil,
- Salt to taste.
Preparation
- Preheat the oven to 200 C degrees,
- Lightly grease a 22*22 cm ovenware,
- In a skillet heat half of vegetable oil and add chopped onions,
- Cook until tender,
- Add chopped spinach and cook until tender,
- Add some salt and remove from heat,
- For sauce heat the remaining vegetable oil in a sauce pan and add tomato paste,
- Cook for 2-3 mins,
- Add grated tomatoes and cook for about 5 mins in low heat,
- Add some salt and remove from heat,
- Add cottage cheese to cooled spinach and mix,
- Soften the lasagna noddles in boiling water,
- Divide the spinach and cheese mixture evenly between the noodles, spreading the mixture over the entire length of each noodle,
- Roll up the noodles from bottom to top, and place in pan, side by side, touching. Pour the tomato sauce over the rolls, and sprinkle the parmesan cheese over top,
- Bake for 20 to 25 minutes, or until heated through and the sauce is bubbling.
