Zucchini Rolls Gratin
Serving : 4 Servings
Ingredients
- 5 (1 kg) zucchinis,
- 4 tbsps vegetable oil,
- 1 cup grated mozzarella,
- Salt to taste.
For Tomato Sauce;
- 1 large tomato, peeled and diced,
- 3-4 tbsp vegetable oil,
- 1 onion, chopped,
- 1 clove of garlic,
- 1 tbsp tomato paste,
- 1 tsp sugar,
- 1 tbsp grape vinegar,
- Salt to taste.
For Bechamel Sauce;
- 1 tbsp butter,
- 1 tbsp flour,
- 3/4 cup milk,
- Salt and pepper to taste,
- 1/2 cup grated parmesan,
Preparation
- Wash and peel the zucchinis,
- Cut into lengthwise slices,
- Place a parchement paper in a baking pan,
- Place the zucchini slices on the parchement paper,
- Spread vegetable oil and sprinkle salt,
- Bake in a 200 C degrees preheated oven for 20 mins,
- Meanwhile prepare the tomato sauce,
- Heat vegetable oil in a large pan,
- Add onions and cook until tender,
- Add minced garlic and tomato paste and cook for 2-3 mins,
- Add diced tomato and cook for 5 mins.,
- Add vinegar, salt and sugar, cook for 3 mins. and remove from heat,
- Remove the zucchinies from oven and wait until they become to room temperature,
- Put a dessert spoon of grated mozzarella into each slice, roll and place into a 22*17 cm baking dish,
- Pour tomato sauce over,
- For bechamel sauce heat butter in a pan,
- Add flour and stir fry for a few mins.,
- Add milk and cook stirring until set,
- Pour the bechamel sauce over the zucchini rolls,
- Sprinkle grated parmesan on top,
- Bake in a 180 C degrees oven until the cheese melts.
