Zucchini Rolls Gratin

Zucchini Rolls Gratin


  • 4 large zucchinis,
  • 2 tbsps vegetable oil,
  • 1 cup grated mozzarella,
  • Salt to taste.

For Tomato Sauce;

  • 1 large tomato, peeled and dieced,
  • 3-4 tbsp vegetable oil,
  • 1 onion, chopped,
  • 2 cloves of garlic,
  • 1 tbsp tomato paste,
  • 1 tsp paprika,
  • 1 tsp sugar,
  • 1 tbsp grape vinegar,
  • 1/2 cup hot water,
  • Salt to taste.

For Bechamel Sauce;

  • 3/4 cup milk,
  • 1 egg,
  • 1 tbsp flour,
  • Salt and pepper to taste,
  • 1/2 cup grated parmesan,


  1. Wash and peel the zucchinis,
  2. Cut into lengthwise slices,
  3. Place a parchement paper in a baking pan,
  4. Place the zucchini slices on the parchement paper,
  5. Spread vegetable oil and sprinkle salt,
  6. Bake in a 200 C degrees preheated oven for 20 mins,
  7. Meanwhile prepare the tomato sauce,
  8. Heat vegetable oil in a large pan,
  9. Add onions and cook until tender,
  10. Add minced garlic and tomato paste and cook for 2-3 mins,
  11. Add paprika and diced tomato and foor fo 5 mins.,
  12. Add water, vinegar, salt and sugar, cook for 3 mins. and remove from heat,
  13. Remove the zucchinies from oven and wait until they become to room temperature,
  14. Put a dessert sppon of grates mozzarella into each slice, roll and place into a 22*15 cm oval baking dish,
  15. Pour tomato sauce over,
  16. For bachamel sauce beat milk, egg, flour, salt and pepper in a deep bowl,
  17. Pour the sauce on tomato sauce,
  18. Sprinkle grated parmesan on top,
  19. Bake in a 200 C degrees oven until golden on top.
