Zucchini Rolls Gratin

Zucchini Rolls Gratin


  • 5 (1 kg) zucchinis,
  • 4 tbsps vegetable oil,
  • 1 cup grated mozzarella,
  • Salt to taste.

For Tomato Sauce;

  • 1 large tomato, peeled and diced,
  • 3-4 tbsp vegetable oil,
  • 1 onion, chopped,
  • 1 clove of garlic,
  • 1 tbsp tomato paste,
  • 1 tsp sugar,
  • 1 tbsp grape vinegar,
  • Salt to taste.

For Bechamel Sauce;

  • 1 tbsp butter,
  • 1 tbsp flour,
  • 3/4 cup milk,
  • Salt and pepper to taste,
  • 1/2 cup grated parmesan,


  1. Wash and peel the zucchinis,
  2. Cut into lengthwise slices,
  3. Place a parchement paper in a baking pan,
  4. Place the zucchini slices on the parchement paper,
  5. Spread vegetable oil and sprinkle salt,
  6. Bake in a 200 C degrees preheated oven for 20 mins,
  7. Meanwhile prepare the tomato sauce,
  8. Heat vegetable oil in a large pan,
  9. Add onions and cook until tender,
  10. Add minced garlic and tomato paste and cook for 2-3 mins,
  11. Add diced tomato and cook for 5 mins.,
  12. Add vinegar, salt and sugar, cook for 3 mins. and remove from heat,
  13. Remove the zucchinies from oven and wait until they become to room temperature,
  14. Put a dessert spoon of grated mozzarella into each slice, roll and place into a 22*17 cm baking dish,
  15. Pour tomato sauce over,
  16. For bechamel sauce heat butter in a pan,
  17. Add flour and stir fry for a few mins.,
  18. Add milk and cook stirring until set,
  19. Pour the bechamel sauce over the zucchini rolls,
  20. Sprinkle grated parmesan on top,
  21. Bake in a 180 C degrees oven until the cheese melts.
