Baked Spinach Mac and Cheese Recipe

Serving : 4-6 Servings

Ingredients

  • 1 bunch spinach,
  • 1 small onion,
  • 1/2 packet bead macaroni,
  • 1 cup feta cheese,
  • 2 cups grated parmesan cheese,
  • 1 egg,
  • 2 cups of milk,
  • 3 tablespoons of vegetable oil,
  • Salt,
  • Pepper.

Preparation

  1. Chop the onion and lightly sauté in oil until translucent,
  2. Add thinly chopped spinach and cook until its water is absorbed,
  3. In a large pot with boiling salted water cook bead macaroni until al dente and drain,
  4. In a large bowl mix together the eggs and milk,
  5. Add the pasta, spinach, feta cheese, salt and pepper, stir well,
  6. Pour the mixture into a greased ovenware,
  7. Bake in a preheated 210 degree C oven until golden brown,
  8. Let stand 10 minutes before serving.
