Olive Oil Celeriac Stew Recipe

Serving : 4 Servings
Ingredients
- 1 large celeriac,
 - 1 potato,
 - 1 carrot,
 - 1 onion,
 - 1/4 cup olive oil,
 - 2 teaspoons salt,
 - 2 teaspoons sugar,
 - 2 teaspoons flour,
 - 1 lemon,
 - 4 cups water.
 
Preparation
- Cut the celery, potato and carrot into small cubes,
 - Slice the onion and rub it with some salt (using your hands) until it releases its juices,
 - Heat the oil in a pot,
 - Place the celery, potato, carrot and onion in the pot (in this order) and cook for 5 mins over medium heat without stirring,
 - Squeeze the lemon,
 - Stir together the water, lemon juice, sugar, salt and flour in a bowl,
 - Pour this mixture over the vegetables in the pot and cook until the veggies are softened,
 - Serve chilled with parsley.
