Vegetable Soup Recipe

Ingredients

  • 1 onion,
  • 1 green zucchini,
  • 1 carrot,
  • 1 potato,
  • 1 charleston pepper,
  • 1 tomato,
  • 1 handful finely chopped parsley,
  • 1 handful finely chopped dill,
  • 3 tablespoons olive oil,
  • 1 tablespoon flour,
  • 5 cups water,
  • Salt.

Preparation

  1. Finely dice the onion, carrot, potato, zucchini, pepper and tomato,
  2. Heat the olive oil in a pot,
  3. Add the onion and sauté until translucent,
  4. Now add the carrot, potato, zucchini, pepper and tomato in order stirring well in between each addition,
  5. Put the lid on and cook down the vegetables on low heat for 10 mins,
  6. Now stir in the flour and cook for 1 more min,
  7. Add the hot water and cook until the vegetables are softened,
  8. Add the dill, parsley and salt, stir and remove from heat.
