Vegetable Bulghur Soup
Serving : 6 Servings
Ingredients
- 1 onion,
- 1 potato,
- 1 carrot,
- 1 green zucchini,
- 1/4 cup thin bulgur wheat,
- 1 tablespoon tomato paste,
- 2 teaspoons paprika,
- 1 tablespoon butter,
- 2 tablespoons olive oil,
- 5 cups water,
- 1 handful minced parsley,
- Salt.
Preparation
- Dice the vegetables into small cubes,
- Heat the butter and olive oil in a pot,
- Add the onion and sauté until translucent,
- Add the tomato paste and stir for 2 mins,
- Add the paprika and stir,
- Add the rest of the vegetables, stir and cook on low heat until softened,
- Add the water and bulgur and cook on low heat until the vegetables and bulgur are fully cooked,
- Stir in the salt and parsley then remove from heat.
