Vegetable Bulghur Soup

Ingredients

  • 1 onion,
  • 1 potato,
  • 1 carrot,
  • 1 green zucchini,
  • 1/4 cup thin bulgur wheat,
  • 1 tablespoon tomato paste,
  • 2 teaspoons paprika,
  • 1 tablespoon butter,
  • 2 tablespoons olive oil,
  • 5 cups water,
  • 1 handful minced parsley,
  • Salt.

Preparation

  1. Dice the vegetables into small cubes,
  2. Heat the butter and olive oil in a pot,
  3. Add the onion and sauté until translucent,
  4. Add the tomato paste and stir for 2 mins,
  5. Add the paprika and stir,
  6. Add the rest of the vegetables, stir and cook on low heat until softened,
  7. Add the water and bulgur and cook on low heat until the vegetables and bulgur are fully cooked,
  8. Stir in the salt and parsley then remove from heat.
