Olive Oil Celeriac Stew Recipe

Serving : 4 Servings

Ingredients

  • 1 large celeriac,
  • 1 potato,
  • 1 carrot,
  • 1 onion,
  • 1/4 cup olive oil,
  • 2 teaspoons salt,
  • 2 teaspoons sugar,
  • 2 teaspoons flour,
  • 1 lemon,
  • 4 cups water.

Preparation

  1. Cut the celery, potato and carrot into small cubes,
  2. Slice the onion and rub it with some salt (using your hands) until it releases its juices,
  3. Heat the oil in a pot,
  4. Place the celery, potato, carrot and onion in the pot (in this order) and cook for 5 mins over medium heat without stirring,
  5. Squeeze the lemon,
  6. Stir together the water, lemon juice, sugar, salt and flour in a bowl,
  7. Pour this mixture over the vegetables in the pot and cook until the veggies are softened,
  8. Serve chilled with parsley.
