- Rhianna: Can you confirm that you are using starch and not all purpose flour? Why is that? November 17, 2014 5:16 pm
- Kevser: Both stach and all purpose flour is used in the cookies. Starch gives a more delicate texture. November 17, 2014 5:19 pm
- Rhianna: Thanks. And what kind of starch do you use? cornstarch? wheat starch? It is rare to see starch used in North American baking, but I want to make mastic cookies exactly how I tried them in Alacati! November 18, 2014 12:02 am
- Kevser: You can use either corn or wheat starch, it makes no changes. Starch is one of the basic ingredients of Turkish cuisine. It is mainly used in dessert and pastry recipes. You can be sure that you will reach the exact same taste of the cookies you tried im Alacati. I hope you give chance to other recipes also. Regards, November 18, 2014 12:10 am
- Dena: I will definitely try them as I wish could find mastic flavour in North American but I would ask can I replace oil with canola instead of olive oil? Did u ever try it? Thanks July 22, 2016 1:38 am
- Kevser: Maybe you can try shopping online, it may be more easy to find it online. By the way yes you can use canola oil, the the consistency doesn't change, may be there can be a slight change in its taste. July 22, 2016 12:10 pm
- girlchamorro: What does the ingredient, mastic, do in a cookie? Light and crunchy texture? March 20, 2019 4:48 pm
- Kevser: It doesn't have any effect to the texture, it's just an aroma like vanilla. March 25, 2019 10:51 am
