Kaymaklı Kadayıf Recipe
In Turkey it's a tradition o make syrup desserts for bayram holidays. But as far as I have observed, there are not many people making desserts at home during bayram holidays anymore. Older people do not give up their traditions, but they still make the same desserts as they always did. They don't need to use the dessert recipes from the internet when they have the recipes they always make. I still try to share a different syrup dessert recipe every holiday. I say maybe there are a few, like me, who want to continue the habits and traditions they acquired from their mother.
Among the holiday preparations in my childhood, the most exciting thing for me was deciding on the bayram dessert. My mother would ask everyone what to do that bayram. At that time, such a wide variety of desserts were not known. Home made baklava, kadayıf or gazoz tatlısı were the most popular options. I didn't like baklava very much when I was a child. I had an on-and-off relationship with gazoz tatlısı, but I loved kadayıf. That's why I always wanted kadayıf.
After I started making my own desserts, I started to have a hard time choosing between kadayıf varieties such as kadayıf rolls in baklava phyllo and shekerpare, the favorite syrup dessert of my adulthood. This holiday, I chose this portioned kaymaklı kadayıf recipe to share. I enlivened the dessert by filling them with homemade kaymak and ground pistachios.
If you wish, you can omit kaymak, make a simple pudding consisting of semolina and milk instead, and use walnuts instead of pistachios. Even if you don't want to deal with these, you can prepare them without filling with anything. When kadayıf dessert is prepared in portions in this way, it is very easy to serve and each portion is crispy on all sides. If you like crispy kadayıf, you should definitely try it in this form instead of the tray kadayıf.

Kaymaklı Kadayıf Recipe with Video
Ingredients
- 250 g fresh kadayif,
- 100 g of butter,
- 1 tablespoon of kaymak,
- 1/2 cup of ground pistachios.
For the syrup;
- 2 cups of sugar,
- 2 cups of water,
- Half a slice of lemon.
Preparation
- For the syrup, take sugar, water and lemon slice in a saucepan and boil over high heat until the sugar dissolves,
- Lower the heat and simmer until the syrup thickens, about 20 minutes,
- Take out the lemon, remove the syrup from the stove and let it cool,
- Melt the butter,
- Divide the kadayıf into metal muffin moulds, press and make a hole in the middle,
- Share half of the butter among the muffin molds,
- Put a teaspoon of pistachios and a teaspoon of kaymak in the hole,
- Fold the remaining kadayıf on the side into the center and close them by pressing,
- Pour the remaining butter over them,
- Bake in a preheated oven at 190 degrees until golden brown,
- Take it out of the oven and share the syrup over them,
- After they have absorbed the syrup, turn them upside down and remove them from the mold and serve them by sprinkling pistachios on them.
