Green Almond Cacık Recipe

Green almonds and of course green plum and green apricot are very popular snacks in Mediterranean countries during spring. Normally they are eaten solo or with salt but also there are a few recipes made with them. Green almond cacık is one of them. It's mostly popular in Aegean region.

Green almond cacık does not have a very different taste, it has the taste of green almond. It turns out to be a slightly sour cacık that blows the minds of those who eat it unknowingly. I'm not even talking about the beauty of its color.

In order to prepare green almond cacık, the almonds need to be cut as small as possible. Green almonds have a crispy consistency. If you chop them coarsely, it will cause an uncomfortable texture that is felt too much in cacık. The easiest way to chop them in a size that will not be disturbing is to use a food processor. But if you don't have one, you can cut them with a sharp and wide knife finely.

Finally, if you like greens such as fresh mint and dill in cacık, you can also add it to green almonds cacık.

Ingredients

  • 30 green almonds,
  • 2 cups of plain yoghurt,
  • 1 clove of garlic,
  • 1 teaspoon salt,
  • 2 tablespoons of olive oil.

Preparation

  1. Take the green almonds and garlic into the food processor and pulse until as tiny as possible,
  2. In a bowl, mix the ground green almonds and garlic, yogurt, salt and olive oil,
  3. Take the mixture on serving plates, drizzle olive oil over and decorate with the greens you love.
