Elbasan Tava Recipe
Serving : 6 Servings
Ingredients
- 1 kg mutton with bones,
- 1 onion, quartered,
- 1 tbsp butter,
- 2 cups strained yogurt,
- 2 egg yolks,
- 3/4 cup flour,
- 4 cups boiling water,
- 1 tsp chilli,
- Salt to taste.
Preparation
- Melt the butter in a pressure cooker,
- Add mutton and sautee until it changes color to brown,
- Add onions and sautee for 2-3 mins.,
- Add water and salt, cover the lid,
- Cook until the mutton removes easily from the bones,
- Take mutton into a 21*21 cm baking dish,
- Remove the bones and shred mutton, spread evenly,
- In a sauce pan beat the yogurt, egg yolks and 1 cup of broth together,
- Add flour and keep beating until no lumps,
- Cook the sauce, constantly beating, until set,
- Remove from heat, add some salt and beat again,
- Pour the sauce over the mutton evenly,
- Sprinkle chilli on top,
- Bake in a 180 C degrees pre-heated oven until golden.
