Diet Vegetable Soup Recipe

Serving : 6 Servings

Ingredients

  • 1 small celery root, chopped,
  • 1 carrot, chopped,
  • 1 soup bowl of cauliflower, chopped,
  • 1 soup bowl of broccoli, chopped,
  • 1 tbsp plain yogurt,
  • Juice of 1 small lemon,
  • Salt to taste,
  • 1/2 tsp pepper,
  • 1/2 tsp cumin,
  • 1 tbsp dried mint,
  • 5 cups boiling water.

Preparation

  1. Por the water into a deep pan,
  2. Add vegetables, cook until tender,
  3. Then pulse until smooth,
  4. In a seperate bowl mix yogurt and lemon juice together,
  5. Add a scoop of soup into the bowl and stir fast and constantly,
  6. Add another scoop and stir,
  7. Add the mixture back to the pan and stir fast and constantly,
  8. Add some more water if it is too thick for you,
  9. Cook for 2-3 mins.,
  10. Add salt and spices, stir and remove from heat.
