Diet Vegetable Soup Recipe
Serving : 6 Servings
Ingredients
- 200 g of celeriac,
- 1 stalk of leek,
- 1 soup bowl of broccoli,
- 1 green pepper,
- Juice of 1 small lemon,
- 1 tablespoon of olive oil,
- 1/4 teaspoon of black pepper,
- 1/4 teaspoon of cumin,
- 1 teaspoon of thyme,
- Salt,
- 5 cups of boiling water.
Preparation
- Finely chop the leek and take it into a pressure cooker,
- Peel and finely chop the celeriac and add it to a pot,
- Chop the pepper into small pieces and add it to the pot,
- Add olive oil and 1/4 of water and stir continuously over medium heat until the water evaporates and the color of the vegetables changes,
- Break the broccoli with your hands and add it to the pot,
- Add 5 cups of boiling water,
- Close the lid and cook until the vegetables are soft,
- Blend with an immersion blender,
- Add lemon juice, salt and spices and mix.
