Diet Vegetable Soup Recipe

Serving : 6 Servings

Ingredients

  • 200 g of celeriac,
  • 1 stalk of leek,
  • 1 soup bowl of broccoli,
  • 1 green pepper,
  • Juice of 1 small lemon,
  • 1 tablespoon of olive oil,
  • 1/4 teaspoon of black pepper,
  • 1/4 teaspoon of cumin,
  • 1 teaspoon of thyme,
  • Salt,
  • 5 cups of boiling water.

Preparation

  1. Finely chop the leek and take it into a pressure cooker,
  2. Peel and finely chop the celeriac and add it to a pot,
  3. Chop the pepper into small pieces and add it to the pot,
  4. Add olive oil and 1/4 of water and stir continuously over medium heat until the water evaporates and the color of the vegetables changes,
  5. Break the broccoli with your hands and add it to the pot,
  6. Add 5 cups of boiling water,
  7. Close the lid and cook until the vegetables are soft,
  8. Blend with an immersion blender,
  9. Add lemon juice, salt and spices and mix.
