Diet Vegetable Soup Recipe
Serving : 6 Servings
Ingredients
- 1 small celery root, chopped,
- 1 carrot, chopped,
- 1 soup bowl of cauliflower, chopped,
- 1 soup bowl of broccoli, chopped,
- 1 tbsp plain yogurt,
- Juice of 1 small lemon,
- Salt to taste,
- 1/2 tsp pepper,
- 1/2 tsp cumin,
- 1 tbsp dried mint,
- 5 cups boiling water.
Preparation
- Por the water into a deep pan,
- Add vegetables, cook until tender,
- Then pulse until smooth,
- In a seperate bowl mix yogurt and lemon juice together,
- Add a scoop of soup into the bowl and stir fast and constantly,
- Add another scoop and stir,
- Add the mixture back to the pan and stir fast and constantly,
- Add some more water if it is too thick for you,
- Cook for 2-3 mins.,
- Add salt and spices, stir and remove from heat.
