Sour Leek Soup Recipe

  • 2-3 leeks,
  • 1 tablespoon butter,
  • 2 tablespoons flour,
  • 3 tablespoons plain yogurt,
  • Juice of half a lemon,
  • 1 egg yolk,
  • 5 cups water,
  • Salt,
  • Black pepper.


  1. Finely chop the leeks,
  2. Melt the butter in a saucepan and add in the chopped leeks,
  3. Cook over low heat until the leeks are tender,
  4. Add the water and cook for 10 mins,
  5. In a separate bowl, whisk together the lemon juice, egg yolk, yogurt and flour,
  6. Remove the soup from heat,
  7. Transfer 1 ladleful of the soup into the yoghurt mixture to temper it while stirring,
  8. Once the yoghurt mixture is tempered, add it back into the soup and mix well,
  9. Put the soup back on the stove over medium heat,
  10. Cook for 2-3 mins or until it is set, then remove from heat,
  11. Add the salt and pepper,
  12. Optionally heat 2-3 tbsps vegetable oil in a sauce pan,
  13. Add powdered chilli and stir, remove from heat,
  14. Pour the sauce over while serving.
