Sour Leek Soup Recipe
Serving : 6 Servings
Ingredients
- 2-3 leeks,
- 1 tablespoon butter,
- 2 tablespoons flour,
- 3 tablespoons plain yogurt,
- Juice of half a lemon,
- 1 egg yolk,
- 5 cups water,
- Salt,
- Black pepper.
Preparation
- Finely chop the leeks,
- Melt the butter in a saucepan and add in the chopped leeks,
- Cook over low heat until the leeks are tender,
- Add the water and cook for 10 mins,
- In a separate bowl, whisk together the lemon juice, egg yolk, yogurt and flour,
- Remove the soup from heat,
- Transfer 1 ladleful of the soup into the yoghurt mixture to temper it while stirring,
- Once the yoghurt mixture is tempered, add it back into the soup and mix well,
- Put the soup back on the stove over medium heat,
- Cook for 2-3 mins or until it is set, then remove from heat,
- Add the salt and pepper,
- Optionally heat 2-3 tbsps vegetable oil in a sauce pan,
- Add powdered chilli and stir, remove from heat,
- Pour the sauce over while serving.
