Dalgona Iced Mocha Recipe
A lot of people have probably already forgotten about the dalgona coffee that took the world by storm last year. Except for one person; I. Remembering the coffee frothing method used in dalgona coffee this summer, I revived the recipe a little, taking into account the feedbacks I received during this time. Many people who did not enjoy dalgona coffee were thinking that the milk and foam did not mix very well and the milk remained bland. In the dalgona iced mocha recipe, I wanted to flavor the milk with a little cocoa powder and sugar and give it both consistency and coolness with a little ice. Because now that I think about it, one of the cons of dalgona coffee was that the milk was cold but not cold enough.
In order to solve the problem of foam and milk not mixing with each other, I increased the amount of water to decrease the consistency of the foam. Although it gives a satisfactory presentation when you first prepare it in this way, the foam begins to disperse easily when mixed and as it waits. Also, in this way, cocoa milk mixes with coffee and turns into mocha easily.
The most important trick of the recipe is that it must be served immediately after preparation. Otherwise, both the foam begins to deflate and the icy texture begins to melt. From here, you can understand that it is not possible to prepare the foam beforehand and keep it waiting.
I want to warn you about two things else. During the dalgona coffee trend, there were those who tried the recipe and did not succeed. There were two reasons for this. The first one is that these people remove the sugar from the foam mix to make the coffee sugar-free. In summary, you can't make the foam sugar-free. But if you wish, you can skip to use sugar in the milk mixture. The second is that they use lighter colored and softer coffees sold as gold instead of classic instant coffee. Again, this coffee is not suitable for making dalgona coffee. You need to use classic, sugar-free, not gold instant coffee.

Dalgona Iced Mocha Recipe with Video
Ingredients
- 500 ml of any type of milk,
- 2 teaspoons of cocoa powder,
- 1 teaspoon of sugar,
- 10 ice cubes.
For Dalgona;
- 2 tablespoons of instant coffee,
- 1 tablespoon of sugar,
- 6 tablespoons of boiling water.
Preparation
- For Dalgona, combine coffee, sugar and water in a narrow and deep container,
- Beat with a hand mixer until it becomes a thick foam,
- Take the milk, cocoa powder, sugar and ice in a vertical blender or a food processor with an ice crusher and grind until the ice is crushed,
- Divide the mixture into two serving glasses,
- Spread the dalgona foam on them,
- Serve immediately.
