Dalgano Coffee Recipe
Dalgano cofee is the new challange of social media, especially Youtube. Actually, it had already been done. We have been drinking it for years as Frappe. I think it was just discovered in South Korea and the South Korean Youtubers spread it back to the world with their perfect Youtube videos.
Dalgano coffe's foam has a more intense consistency and shapable structure than Frappe. Of course, what makes this thick consistency is the excess amount of coffee.
Normally, 2 tablespoons of coffee, 2 tablespoons of sugar, 2 tablespoons of milk are used for 200 ml of milk, according to the Korean recipes. I chose to make a more intense foam in less time with less coffee by using a narrow and deep bowl to whip (it makes a huge difference in every kind of whipping including egg whites and heavy cream), and to reduce the amount of sugar according to my taste. Make sure to adjust the amount of sugar according to your taste. For this, you can make the recipe for one person (using half of all ingredients) on your first try and decide to increase or decrease the sugar in the next times. By increasing the amount of water, you can also obtain a less viscous and therefore less sharp foam.
If you mix the foam with milk completely, it will be hard to drink. No problem if you love it but it can be heavy for those who don't. After mixing the foam with milk a little bit, you can continue to mix according to whether it tastes heavy or not.
Since the foam is intense in consistency, when you put it in milk, it starts to swim in the milk as if you put a hard object, which can cause you to put more than enough foam in a single glass. For this reason, puddling the foam on the edges of the glass by placing it on the edges of the glass (making it hold onto the edges of the glass) will make it easier.
