Coffee Mousse Recipe

This recipe takes a different approach from classic mousses, using only a small amount of egg and relying on the fluffy texture of whipped cream for its rise. In Turkish cuisine, the heavy use of eggs is generally not well received. Many Turks believe that dishes with more than two eggs will have a strong eggy smell. However, the unpleasant eggy smell doesn’t come from the quantity of eggs used but rather from the eggs themselves. If you use an egg with an off smell, even one egg can overpower your dish.
Usually, this smell is caused by the egg being old, but occasionally, it can result from the chicken’s diet. When you tell someone that their dish smells like eggs because the eggs may be old, you often hear responses like, “That’s impossible; I just bought the eggs yesterday.” But the date you purchase the eggs doesn’t necessarily correlate with their freshness. Unless you collect the egg directly from the chicken yourself, there’s no way to know how fresh it is or when it was laid.
In summary, I designed this recipe to use as little egg as possible to provide peace of mind, but even though it only uses one egg, this doesn’t guarantee it will be odor-free. If the egg you use is old or has a strong smell, even a dessert with just one egg can have an unpleasant odor.
There’s another important point to address about the egg in this recipe: whether or not it’s fully cooked. While there’s no further cooking process after the egg yolk and white are added to the other ingredients, the egg does get cooked as it combines with the hot ingredients.
When developing this coffee mousse recipe, I didn’t venture into uncharted territory. Instead, I adapted my much-loved chocolate mousse recipe, which has been tried and tested by many over the years, without disappointing anyone. The result? Absolutely amazing.
Although mousse has a fluffy texture that gives the impression of being a light dessert, the ingredients are quite calorie-dense. For this reason, portion control is key.

Coffee Mousse Recipe with Video
Ingredients
- 200 g white chocolate,
- 200 ml heavy cream,
- 60 g butter,
- 1/4 cup milk,
- 1 egg (separated into yolk and white),
- 1 tablespoon instant coffee.
Preparation
- Place the chocolate, milk, and butter in a saucepan. Heat over low heat, stirring until melted.
- While they melt, whisk the egg white until stiff peaks form (it should not fall if you turn the bowl upside down).
- In a separate bowl, whip the heavy cream until it thickens.
- Remove the chocolate mixture from the heat and immediately add the egg yolk, whisking quickly.
- Add the egg white and gently mix.
- Stir in the coffee.
- Gradually fold in the whipped cream, a little at a time.
- Pour the mixture into serving cups and refrigerate.
- Let it chill for at least 2 hours before serving.
