Rainbow Cookies Recipe
Ingredients
- 2 eggs,
- 250 gr. butter softened at room temperature,
- 1,5 cups granulated sugar,
- 5 cups flour,
- 1/2 teaspoon baking soda,
- 1 pinch salt,
- 25 gr. vanilla powder,
- Food colorings (add with the tip of a toothpick).
Preparation
- Cream together the eggs and sugar until white and frothy,
- Add the butter and continue whisking,
- Mix together the dry ingredients in a separate bowl,
- Add the dry ingredients into the egg mixture slowly while stirring using a silicon spatula,
- When all the ingredients are incorporated, knead with your hands, then divide the cookie dough into 6 pieces,
- Add a different food coloring to each and knead well to distribute the color throughout the dough,
- Cover a bread loaf pan with plastic wrap,
- Roll the dough out into the size of the pan and place the doughs in the pan in the order you want,
- Refrigerate for at least 4 hours,
- Remove the dough from the pan and slice,
- Trim the edges of the slices to flatten,
- Divide each slice into two to form 2 cookies,
- Combine the trimmed dough and form into small ball shaped cookies,
- Place all the cookies on a baking sheet lines with parchment paper and bake in a 180 degrees Celsius preheated oven for 9 mins.
